Ingredients
• 3 medium potatoes, peeled and cubed
• 1 cup green peas (fresh or frozen)
• 2 medium onions, finely chopped
• 2 tomatoes, chopped or pureed
• 1 tsp ginger garlic paste
• 1/2 tsp turmeric
• 1 tsp red chili powder
• 1.5 tsp coriander powder
• 1/2 tsp cumin seeds
• 1/2 tsp garam masala
• Salt to taste
• 2–3 tbsp oil
• Fresh coriander for garnish
• Water as needed
How to Make It
1. Heat oil in a pan and add cumin seeds. Let them crackle.
2. Add chopped onions and sauté until golden.
3. Mix in the ginger garlic paste and cook for a minute.
4. Add tomatoes along with turmeric, chili powder, coriander powder, and salt. Cook until the masala releases oil.
5. Add potatoes and peas, coating them well in the masala.
6. Pour in 1.5–2 cups of water, cover the pan, and cook for 12–15 minutes until the potatoes turn soft.
7. Finish with garam masala and fresh coriander.

• For a richer gravy, mix in a spoon of yogurt or a splash of cream.
• Adjust spice levels as per your taste.
• A pinch of crushed kasuri methi can give it a dhaba-style touch.
